21 Day Fix All Purpose Seasoning and Broiled White Fish

I'm gonna admit it. I'm a spice virgin. I don't know how to use them, what to use them for, or even what to use them on! So, when I got the 21 Day Fix program (see here for details about the program), I decided to give their spice blends a whirl.

OMG! I had no idea what I was missing!

My favorite by FAR is the All Purpose Seasoning. I like to use it in the Broiled White Fish recipe. I was just going to give you the recipe for the 21 Day Fix All Purpose Seasoning but I might as well complete it and give you the SIMPLE directions for the broiled white fish too!

ENJOY!!!



21 Day Fix All Purpose Seasoning:
(this is the recipe tripled so I don't have to make it very often - I use it a lot!)

  • 4 Tbsp Onion Powder
  • 2 Tbsp Garlic Powder
  • 2 Tbsp Mustard Powder
  • 3/4 tsp Dried Thyme
  • 3/4 tsp ground black pepper
  • 1 Tbsp sea salt (I use Pink Himalayan Salt)



Broiled White Fish:

Ingredients:
(makes 4, 4oz servings)

  • 16 ounces Fresh Caught, White Fish
  • 21 Day Fix All Purpose Seasoning

Directions:
  1. Preheat the broiler to high (it's 500 degrees F in my oven).
  2. Make sure the rack is set for the broiler.
  3. Rinse fish and pat dry.
  4. Coat completely with the 21 Day Fix All Purpose Seasoning
  5. Place fish in a glass baking dish.
  6. Broil for 9 minutes on EACH side (18 minutes total).
  7. Enjoy!
I made this for dinner last night and I have leftovers for tonight - I can't wait!!! I served it with 2 yellows and 2 tsps, which is one sweet potato diced and coated with 2 tsps of olive oil! You can see that in the picture! Let me know what you think and if you made any changes!

Apple Cinnamon Granola


I don't know about you, but I'm ALWAYS looking for new snacks. I get bored easily doing the same thing week after week after week! I was in the grocery store last week searching for something new and I came across the prepackaged granola. I was SHOCKED to see how much sugar is in each serving! I refuse to eat a ton of sugar because it's horrible for you!
So I searched, and I searched, and I searched and finally I found this AMAZING little recipe for homemade apple cinnamon granola! And the best part??? There's NO SUGAR ADDED!

How completely amazing would this be mixed with 1/2 cup of plain 0% greek yogurt??? NOM NOM NOM!



Ingredients:

(makes 16, 1/4 cup servings)

  • 1/4 cup raw honey (or 100% pure maple syrup)
  • 1/4 cup virgin coconut oil
  • 1 tsp. pure vanilla extract
  • 3 cups old-fashioned rolled oats
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. sea salt
  • 1/2 cup chopped, dried, unsweetened apples
  • 1/4 cup raisins
  • 1/4 cup coarsely chopped raw walnuts

Directions:
  1. Preheat oven to 300° F.
  2. Line baking pan with parchment paper. Set aside.
  3. Heat honey and oil in small saucepan over low heat, stirring frequently, for 2 minutes or until oil has melted. Add extract; set aside.
  4. Combine oats, cinnamon, and salt in a large mixing bowl; mix well.
  5. Combine oat mixture and honey mixture, stirring until oats are evenly coated with honey.
  6. Place on prepared baking pan, spreading in a thin, even layer.
  7. Bake for 30 to 35 minutes, stirring every 10 minutes, until granola is light golden brown and crunchy.
  8. Cool granola completely (it will get crunchier as it cools).
  9. Add apples, raisins, and walnuts; mix well.
There are many different variations of this granola. Some healthy additions include unsweetened shredded coconut, sulfate-free dried apricots, flax seeds, pumpkin seeds, walnuts, dried unsweetened berries, hemp seeds, etc. You can store cold granola in an airtight container for up to a week. 


Serving details:
(1 serving = 1/4 cup)

Fat = 5
Saturated Fat = 3
Protein = 1
Sugar = 7

Fiber = 1

Almond Crusted Chicken Fingers


Every once in a while, we just want some food that is going to take us back to our childhood. What better food than chicken fingers?! Remember those days, sitting in the cafeteria at school, eating those delicious, nutritious, good for you morsels of chicken.
Wait a minute! 
Are we talking about the same chicken nuggets? The ones I ate in school were disgusting, fried, additive-and-filler-packed ground chicken parts. No thanks!
Here's a great, wholesome, healthy alternative to those processed hunks of random chicken parts! Enjoy!
Ingredients:
(makes 4 servings)



  • 3 Tbsp. honey
  • 2 Tbsp. Dijon mustard
  • 2 tsp. rice wine vinegar
  • Olive oil cooking spray
  • 2 large eggs
  • 2 Tbsp. water
  • 1 pound chicken tenders
  • 1 cup whole wheat Panko® bread crumbs (Japanese-style bread crumbs)
  • 1/2 cup sliced almonds, finely chopped
  • 1/4 tsp. sea salt
  • 1/4 tsp. ground black pepper


  • Directions:
    1. Combine honey, Dijon mustard, and rice vinegar in small bowl; mix well and chill.
    2. Preheat oven to 425° F. Line baking sheet with foil; spray with cooking spray.
    3. Place eggs and water in medium shallow bowl; beat lightly.
    4. Soak chicken pieces in egg mixture; set aside.
    5. Combine bread crumbs, almonds, sea salt, and black pepper in large resealable plastic bag and shake to combine.
    6. Working with a few pieces at a time, lift chicken from egg mixture, letting excess drip back into bowl, and drop into bag containing bread crumb mixture. Seal bag and shake to coat; repeat with remaining chicken.
    7. Place chicken on prepared baking sheet. Bake for 18 to 20 minutes or until cooked through and golden brown, turning once halfway through.
    8. Serve with prepared honey mustard dipping sauce (if desired).

    10 Popular Diet Tips to IGNORE!


    I found this great article on the Beachbody.com website and just had to share it with you! Take the time to really think about all the bad diet advice you have gotten over the years. How has it hindered you?

    If you've ever tried to lose a few pounds, you've probably been inundated with diet tips. But take them all with a grain of salt—some advice may sound legit but can actually derail your diet. Here are 10 tips you don't want to follow.

    BAD ADVICE: Choose fat-free or sugar-free foods
    BETTER ADVICE: Don't believe the hype. "They usually use fat and sodium to replace sugar, and sugar to replace fat—or chemicals to replace both," says Denis Faye, Beachbody's nutrition expert. And Rania Batayneh, MPH, a nutritionist and author of the upcoming book, The 1:1:1 Diet, adds, "Removing fat from a food makes it less satiating, so you ultimately may end up eating more." Stick with the original versions, and watch your portions or better yet, eat more unprocessed foods.
    BAD ADVICE: No cheating ever!
    BETTER ADVICE: Relax your diet rules, and you'll be more likely to stick it out long-term. "If 80% of your diet is tight, then 20% can be a party," Faye says. "It keeps you from getting stressed—and stress is a huge obstacle in weight loss." Just plan your splurges ahead of time so you're not giving in to every temptation that crosses your plate.
    BAD ADVICE: Stop snacking.
    BETTER ADVICE: Choose snacks that offer a balance of protein, fiber, and healthy fats—like apples with peanut butter, or carrots with hummus. "A healthy snack can help maintain steady blood sugar levels, which keeps your appetite in check and your energy stable," Batayneh says. Skipping a snack can cause your blood sugar to dip, leaving you moody and famished—and more likely to overeat at mealtime.
    BAD ADVICE: Don't eat fruit—it's full of sugar.
     Man Eating GrapesBETTER ADVICE: Let fruit satisfy your sweet tooth. "Yes, fresh produce is full of sugar and carbs," Faye says. "But sugar itself is not the enemy. Fruit is packed with vitamins, minerals, and phytochemicals; it's also rich in fiber, which slows the absorption of sugar. I've never met a human being who got fat because of bananas." When you're craving sugar, there's no debate that a handful of grapes is healthier than a hot fudge sundae.
    BAD ADVICE: If it's organic, it's good for you.
    BETTER ADVICE: According to the USDA, organic food is produced without antibiotics, growth hormones, conventional pesticides, and synthetic ingredients.1 The problem is that many people assume organic foods are all low in calories, too, which isn't necessarily true. Don't get us wrong—we'd rather eat food that doesn't resemble a science experiment. But, Faye cautions, "You need to use common sense. If it's bad for you with conventional ingredients, it's still bad for you when it's organic." A cookie is a cookie, no matter how all-natural it is.
    BAD ADVICE: Calories in, calories out—it doesn't matter what you eat.
     Salad with CakeBETTER ADVICE: What you're eating matters. Compare a 100-calorie candy bar to 100 calories of avocado—the latter is packed with nutrients and has healthy fats and fiber to keep you full. Or compare 50 calories of spinach (about seven cups) to 50 calories of ice cream (about two tablespoons). To feel full when you're cutting calories, look for foods loaded with water and fiber, like veggies or broth-based soups. Plus, "Hormones have a huge impact on our health. Junk food can trigger bad hormonal responses that, over time, can lead to all kinds of problems, including weight gain," Faye says. Occasionally, someone will pop up in the news claiming they lost a ton of weight while eating nothing but Subway®, Starbucks®, or Snickers® bars—but don't put too much stock in those success stories. "When you go that route, you're not educating yourself," Faye says. "It's like the teach-a-man-to-fish adage. If you give someone a gimmicky diet, they might lose weight for now; but provide them with knowledge, and they can be healthy for life."
    BAD ADVICE: Try XYZ Extreme Diet—it works for everyone!
    BETTER ADVICE: Find a plan that works for you. Gender, age, genetics, metabolism, and lifestyle can all play a role in weight loss—so even if a fad diet has worked for others, that doesn't mean you'll get the same results. "There's no single diet that works for everyone; our biochemical needs are different," Faye says. Talk to a dietitian or nutrition consultant to find a long-term eating strategy that is tailor-fit to you.
    BAD ADVICE: When in doubt, order the salad.
    BETTER ADVICE: Choose your greens wisely. Leafy greens and vegetables may be virtuous, but not if they're slathered in creamy dressing and topped with bacon, candied nuts, croutons, deli meats, or cheese. "Fatty fixings can add hundreds of calories to your meal, and sometimes contain more calories than that juicy burger!" Batayneh says. Saladcan be a healthy choice, but order dressing on the side and limit the add-ons.
    BAD ADVICE: Don't exercise—it'll only make you hungrier.
     Woman Working OutBETTER ADVICE: Get moving—an hour-long workout isn't going to make you suck down calories like Michael Phelps. "Exercise isn't just for losing weight—it improves your cardiovascular health and strengthens your bones," Faye says. You might feel hungrier while recovering from a grueling workout, but that doesn't mean you're going to pack on pounds. "As long as you're eating clean, your body is amazing at self-regulating," Faye adds. "It should crave the calories you need to fuel your workouts, not to get fat."
    BAD ADVICE: Treat yourself for a job well done!
    BETTER ADVICE: Rethink your reward system. After an intense workout, you may feel like you've earned a cocktail or cupcake. But splurging after every workout can quickly undo all your hard work. If you've been good all week, go ahead and grab a guilt-free beer on Friday. But, Faye says, "Don't let every workout become a Pavlovian thing where you need to eat cake afterwards." After all, the best reward for a killer workout is getting one step closer to the body you want.

    Portion Control

    Portion control has always bee a huge hurdle for me. When I am eating food that I enjoy I want to "EAT.ALL.THE.FOOD.NOW."

    In today's society, everything is supersized. You name it, it's big. Food servings, drinks, plates, cars, houses, I could go on and on. The one thing that supersized food and drinks ultimately lead to = a supersized you! No one wants that now do we?

    When I am at home, my trick is an easy one! I use smaller plates and bowls! I have these amazing little cereal bowls that were my Grandmothers. Instead of using my HUGE cereal bowls from Wally World for my food, I use these little bowls. Here's a pic that shows the difference in sizes of the two bowls.


    See what I mean? If I had put today's lunch in the big white bowl, there's no way I would have been filled up because I would have already told myself that it wasn't a full portion! 


    Alright - So what are correct portion sizes?

    It's hard to tell exactly how much is the correct portion size, especially when you are out to eat. Here's a handy little picture I found to help you out!



    So, what do you do when you know what the right portion should be, but you are faced with all.the.food? That's easy!

    If you are out to eat, ask for a to go container BEFORE your meal even comes out. That way, you can divide their "portion" in half and have lunch for tomorrow before you are even tempted to eat.all.the.food.

    Another way to help with portion control is to ask the server to just not bring the bread! It's empty calories and you don't need it. Yes, it may be good. But is it really going to make you feel better to shove that roll in your mouth? Ummm, temporarily - yes, long term - NO! You will feel guilty immediately and then the snowball effect happens. You feel bad, so you eat more, so you feel worse, so you eat more, etc. 



    We went out to eat last Friday night to the Texas Roadhouse for the hubs birthday. I love that place. there were 5 adults, 1 preschooler, and a 5 month old. I couldn't tell the server to not bring the rolls because other people wanted them - said preschooler included! They smelled DELISH and I wanted one - bad. In the end, I just moved them to the opposite end of the table and enjoyed some nice conversation with the MIL, BIL, and SIL instead of eating mindlessly. It was kinda empowering.

    Another trick I commonly use is to chew slowly! By nature, my family and I hoover our food. We don't take time to actually taste it. We just want it in our belleh's! I find that if I take the time to actually taste my food, I get fuller faster. Imagine that, I'm giving my stomach adequate time to tell my brain that it's full!

    I also like to drink a big glass of water about 10 - 20 minutes before my meal. It helps me reach my 90 daily ounces and keep my portions in check because my belly is already partially full!

    For me, portion control is mostly about will power. Do I have the will power to pass on the yummy goodness that is in front of me? Before I started my journey, the answer was no. I would eat it because my mindset was "well, it's only one roll this one time". Guess what? I was gaining weight because "this one time" was every day!

    Now that I'm *almost* -40 pounds into my journey, I am seeing the big payoffs of my dedication. I have more energy, I sleep better, and I KNOW that my small daily decisions are effecting me in a positive way.

    Italian Turkey Cutlets

    I found this recipe from my friend Melanie's blog and I tweaked it to fit my own needs. It was DELISH and I can't wait to have the leftovers for lunch today!


    This is a picture of what my Italian Turkey Cutlets looked like, but it's not my picture. We had green beans, not broccoli ;)


    Ingredients:
    • 1 package of Turkey Breast Cutlets, fat trimmed
    • 2 Tbsp (aprox.)  of Italian seasonings
    • 3 cloves of garlic, minced
    • 1 can (15 ozs) organic, no salt added diced tomatoes
    • 1 small onion, diced
    • 1/2 cup 2% shredded mozzarella cheese

    Directions:
    1. Preheat the oven to 400 degrees.
    2. Lay a piece of foil in the bottom of a 9 x 13 glass baking dish.
    3. Lay in the turkey breast cutlets.
    4. Top cutlets with the Italian Seasoning. I don't measure mine out, I just sprinkle it on till it looks good!
    5. Layer on the minced garlic and diced onion.
    6. Top the garlic and onion with the diced tomatoes.
    7. Sprinkle the cheese on top.
    8. Cover the dish with foil and bake for 40 minutes, or until the turkey breast is cooked through.
    9. Serve with whatever you choose. We had brown rice and no salt added green beans with ours. 
    10. ENJOY!

    Clean Taco Salad

    This dinner is a popular one in our house! I make 2 pans of meat - 1 of beef for hubs and 1 of ground turkey for me! Seriously - this is the easiest dinner ever! If you don't want it as a salad, roll up a traditional soft taco in a whole wheat shell!


    Ingredients:
    • 1 pound ground turkey breast
    • 1 package of low sodium Taco Seasoning
    • 1/3 - 1/2 cup of water
    • 1 - 2 ounces of 0% Plain Greek Yogurt
    • 1 ounce 2% grated cheddar cheese
    • Bag of frozen corn or can of corn
    • Can of black beans
    • Fresh Salsa
    • As much lettuce as your little heart desires!

    Directions:
    1. Brown the turkey breast and drain if there is any fat in the pan.
    2. Turn heat to low.
    3. Return the meat to the heat and add taco seasoning and 1/3 - 1/2 cup of water. 
    4. Let the sauce thicken.
    5. Heat up corn and beans according to the packaging.
    6. Prepare your bed of lettuce.
    7. Top your lettuce with the meat, cheese, corn, beans, yogurt, and salsa.
    8. Enjoy!

    My 60 day results

    I'm sitting here crying as I type this. I guess I didn't realize just how far I have come until I saw these two pictures side by side. I cannot even begin to express my emotions right now - happiness, sadness, embarrassment, joy, pride, and many more!

    I was going to type out my story again for everyone, but you can find it HERE and HERE.

    It's time for my 60 day pictures. They aren't the best but I think they show off nicely the 38 POUNDS I have lost thus far. While I have a LONG way to go still, I am super proud of just how far I have come ;)

    I have to thank a few people for making this journey possible. First, my husband. He gave me the wake up call I needed and continues to support me. Second, my coach Danielle Judd, for messaging me one night and talking to me about my health and fitness goals. She showed me the path to a better me and continues to help me on that journey! Third, my good friend Melanie Mitro, who has helped me and encouraged me along the way. I started out as a participant in her fit club on Tuesday nights and never dreamed that I would gain such a good friend out of the deal. Her encouragement and kind words have meant (and continue to mean) the world to me!


    And last, but certainly not least, a HUGE thank you to everyone that has been following my story. When I see you out and about, I hear nothing but nice comments about how great I look. You can never even imagine how much those comments mean to me.

    Peppermint Patty Shakeology

    I cannot even *think* about a York Peppermint Patty without salivating! They are my one, true weakness. I vow to never give them up!




    The beauty of drinking shakeology is that there are a ton of recipes out there and I happened to stumble upon this one the other day. It's perfect for this time of year! YUMMO!


    Ingredients:

    • 1 cup unsweetened almond milk (I use 1/2 cup almond milk and 1/2 cup water)
    • 1 scoop chocolate shakeology
    • 1 tsp fresh mint OR 1/8 tsp peppermint extract (be careful - peppermint extract is POTENT!)
    • Ice to taste
    • crushed dark chocolate chunks

    Throw it all, except the dark chocolate chunks, into the magic bullet (or blender), blend until smooth. Top with dark chocolate chunks and ENJOY! If you like a thinner consistency (one you can drink) then use less ice. If you like a thicker shake, use more ice! YUM!

    Strawberry Mango Tropical Strawberry Shakeology

    a.k.a. "A party in my mouth"!

    Seriously - this was amazing! The texture was a bit different because the vegan shakeology recipes use brown rice protein instead of whey protein. But it wasn't a BAD different - just different. I want to use all of my Tropical Strawberry packets RIGHT NOW but probably shouldn't ;)


    Ingredients:

    • 1/2 cup unsweetened almond milk
    • 1/2 cup water
    • 1 scoop tropical strawberry shakeology
    • 1/2 cup frozen strawberries*
    • 1/2 cup frozen mango*
    *make sure all your frozen fruit is just that FRUIT! You don't want any added sugar. The only ingredient should be "frozen strawberries" or "frozen mangos" - nothing else!

    Throw it all into the magic bullet (or blender), blend until smooth, and enjoy! If you like a thinner consistency (one you can drink) then use less ice. If you like a thicker shake, use more ice! YUM!

    Chocolate Peanut Butter Cheesecake Shakeology

    If Chalene loves this recipe, then I knew I would too! YUMMO!!!


    Ingredients:

    • Lots of ice
    • 1 cup water (I used 1/2 cup almond milk and 1/2 cup water)
    • 1 scoop chocolate shakeology
    • 2 Tbsp powdered peanut butter (PB2)
    • 2 Tbsp fat free, sugar free cheese cake pudding mix*

    Throw it all into the magic bullet (or blender), blend until smooth, and enjoy! If you like a thinner consistency (one you can drink) then use less ice. If you like a thicker shake, use more ice! YUM!

    * disclaimer - normally I'm not a fan of anything that claims to be fat free. I mean, have you looked at the ingredients on the fat free products? Let me be blunt. Chemical bodybomb are the words that come to mind! But I don't think it's bad to indulge every once in a while :)

    Shakeology Cleanse Day 3


    The Cleanse is DONE! I must admit that I felt it today. I was not in a great mood and I was REALLY craving the stuff I wasn't supposed to eat. That always happens when I know I CAN'T have something - I instantly want it!

    I still can't be sure about my bad mood being from the cleanse. I had a really whiney 3 year old on my hands and, again, I only got 2 hours of sleep last night.

    I'm done. I'm done. I'm done. It really wasn't that bad! I just don't recommend doing it while your 5 month old is teething and up most of the night. Learned my lesson ;)

    Shakeology Cleanse Day 2

    Day 2 of my Shakeology cleanse is d-o-n-e!  I felt great when I woke up this morning. Ready to take on the day. Oh, and I was down 2.5 pounds! EEK!

    As my day progressed, I still felt great but around 5pm, I got a pounding headache. I'm not sure if it was because of the cleanse or because I only got 2 hours of sleep Monday night and the kids were crazy all day.

    Here's what Day 2 looked like:


    Breakfast - 215 calories

    • 3 cups of lettuce
    • 1 cup of sliced raw carrots
    • 4 ounces of leftover Thanksgiving turkey breast
    • 1 Tablespoon EVOO
    • 3 tablespoons Balsamic Vinegar
    Snack 80 calories
    •  apple and green tea
    Snack80 calories (pre workout snack)
    •  banana
    Dinner - 205 calories
    • 1 scoop chocolate shakeology
    • 1/2 cup almond milk
    • 1/2 cup water
    • 1/2 cup frozen strawberries

    Total calories today - 1011

    I'm really trying to stay away from anything processed during this cleanse. I know that I need to eat more tomorrow. I was a bit dizzy today and ate some extra fruit to get my sugar levels up. Normally I would have had a cheese stick with my fruit, but I'm really trying to ditch the processed food during this cleanse. Just whole food and nothing else.

    Shakeology Power Balls

    It's the holiday season! The time between now (Thanksgiving) and Christmas is my FAVORITE time of the year! I love the lights, the Christmas music, Santa, holiday parties, and everything else about the season!

    Something I've noticed since starting on this journey, is that it's hard to pass up dessert. You already know that I'm a self confessed SUGAR ADDICT. So, dessert is a hard one for me!

    I was invited to go to a holiday gathering and decided that I was going to disguise a clean snack as a dessert. Guess what??? NO ONE NOTICED! So that means it's time to share it with you!

    Here ya go!


    Ingredients:
    (makes approximately 12 balls)
    • 8 Tbsp PB2 (low fat, high protein powdered peanut butter)
    • 3 Tbsp Natural Peanut Butter (the ONLY ingredient should be PEANUTS!)
    • 1/2 cup Chocolate Shakeology
    • 3 Tbsp Honey (I use organic)
    • 1/2 cup Quick Oats

    Directions:
    1. Mix PB2 with water until it's a paste-like consistency.
    2. Combine all the ingredients, inclding the PB2 mixture, together in a mixing bowl. It may take some time to blend all the ingredients together. If it's too sticky, sprinkle in some additional Shakeology so that it's a dry/crumbly texture.
    3. Roll the mixture into small individual balls (about the size of a ping-pong ball) and place on a piece of wax paper.
    4. Place the Shakeology balls into the freezer until they are firm.
    5. Store in the freezer for up to a week or serve immediately while they are still frozen.
    This recipe will make approximately 12 balls. Each ball should be around 1 oz.

    1 serving = 1 ball

    Clean Eating Tuna Salad

    I love me some tuna salad! It's packed with protein and quick to make! I typically eat this for lunch but it very well could be a quick dinner too!


    Ingredients:
    (makes 2 servings of the tuna mixture)
    • 1 6oz can of Starkist Low Sodium Chunk Light Tuna in water
    • 2 oz 0% plain greek yogurt
    • 6 baby carrots, shredded
    • 1 oz 2% low fat mild cheddar cheese, sliced from a brick of cheese
    • 1 Thomas' whole wheat english muffin

    Directions:
    1. Drain tuna and spoon into a bowl.
    2. Measure out 2 ounces of 0% plain greek yogurt and add to tuna.
    3. Shred the carrots and add to the tuna/yogurt mixture and combine together.
    4. Toast your english muffin and top the muffin with 1/2 of the tuna mixture and all of the cheese.
    5. Save the extra tuna for tomorrow's lunch or snack.
    6. ENJOY!
    If there are too many grams of fat in this recipe for you, you can use 1/2 a serving of cheese instead of the full 1oz serving. That should cut the fat down to around 5.

    Serving details:
    (1/2 of the tuna mixture, 1 oz of cheese, and 1 english muffin)

    Apple Cinnamon Oatmeal

    This breakfast combines three of my favorite ingredients: apples, cinnamon, and oatmeal. It's perfect for a cold, snowy morning!

    Ingredients:
    • 1/2 cup, dry Quaker Old Fashioned Oat Meal
    • 1 cup water
    • 1 medium apple - I use galas or honeycrisps
    • 1 Tbsp ground flax seeds
    • Cinnamon to taste

    Directions:
    1. Combine oats and water.
    2. Heat on high in the microwave for 3 minutes, or until oatmeal is cooked throughout.
    3. While oatmeal is cooking, cut, core and dice apple.
    4. Add apple, flax, and cinnamon to the cooked oatmeal.
    5. ENJOY!
    The apple sweetens this nicely for me so I don't use any sweetener, but you can certainly add some honey, agave nectar or stevia if needed! Try subbing in other fruits sometime. I've used bluberries - YUMMO!

    Serving details:
    Calories = 263
    Carbs = 51
    Fat = 5
    Protein = 7
    Calcium = 2
    Sugar = 18 (higher because of the apple)

    Snack Ideas

    I've been struggling a bit lately with my meal planning. I have some gallbladder issues and can't tolerate very much fat in my diet. It's completely bumming me out because natural peanut butter was a staple in my diet and I can't have it at all. I also can't eat avocados, beans of any kind, or ground meat.

    So, this blog post is going to focus on some healthy snacks because is one place I have a hard time keeping it fresh. I usually have the same exact snacks every day!

    Some great snacks to plan into your day:


    • 1 serving of fruit and 1 serving of nuts
    • 1 serving of fruit and 1 Tbsp all natural peanut butter
    • 1 serving of veggies and 2 Tbsp of hummus
    • 1/2 cup of fat free cottage cheese and 1 serving of berries of some type
    • 0% Greek yogurt and 1 Tbsp organic honey
    • 1/4 cup dried edamame and 1/4 cup dried cherries - just make sure your dried fruit doesn't have any added sugar.
    • Protein bars (see my recipe page to link to some great protein bars!)
    • Protein shake
    • Shakeology
    • Quest Protein Bar
    • Unsalted brown rice cakes and all natural peanut butter (I really miss this!!!)
    • Whole grain tortilla, all natural PB, and 1/2 banana - banana roll up!
    • Meatloaf Muffins and 1 cup of raw veggies
    • 2 hard boiled eggs
    • 1 small sweet potato w/1 tsp raw honey and 1/2 tsp cinnamon

    Power Cereal

    A HUGE shout out to my good friend Melanie for introducing me to this AMAZING breakfast! It's crunchy, sweet, warm, and packed full of good stuff!


    Ingredients:
    • 2/3 cup cooked quinoa - I use this kind --------------------------->
    • 1/2 cup milk of your choice - I use unsweetened almond milk
    • 1/2 cup blueberries - I use frozen berries
    • 1 Tbsp ground flax seeds
    • Cinnamon to taste

    Directions:
    1. Combine quinoa and milk in a microwave safe bowl.
    2. Heat on high for 45 seconds or until heated.
    3. Add in bluberries, flax, and cinnamon.
    4. ENJOY!
    The blueberries sweeten this cereal nicely for me so I don't use any sweetener, but you can certainly add some honey, agave nectar or stevia if needed! Try subbing in other fruits sometime. I've used apples and raspberries  - YUMMO!
