Vanilla Latte Shakeology

This morning I got to try a new Shakeology recipe completely by accident! The results were pretty spectacular!

Last night I wasn't feeling well (chills, aching legs, etc) so I went to bed early. When I got up this morning, I realized that I never did the dishes from yesterday and our blender wasn't clean. So, plan B it was! I have an extra blender at school, so I just made my Shakeology when I got to work. I poured my cold coffee and almond milk into a travel mug along with a square of dark chocolate. I was ready to go when I got to school.

As I was getting ready to make my shake at work, I realized I didn't have any chocolate Shakeology with me - AHH! I need my chocolate Shakeology! Seriously - it's an addiction. I searched high and low. In every drawer of my desk. In my school bag. In my purse. EVERYWHERE! There was no chocolate Shakeology to be found!

So I did what I could with what I had on hand. I had 5 packets of vanilla so I gave it a whirl. Low and behold, it was DELICIOUS! Here's what I came up with!





Ingredients:

  • 1 scoop/packet Vanilla Shakeology
  • 8oz cold coffee
  • 2-4 oz dark chocolate almond milk
  • 1 square dark chocolate
  • Ice to taste

Directions:
  1. Combine ingredients in a blender.
  2. Blend.
  3. ENJOY!

Sweet Potato Chips

Sweet Potatoes. Are they a part of your healthy lifestyle? Do you shy away from them or run towards them? My entire family, with the exception of my husband, loves these magical little tubers!




Here's the big question. How much do you know about Sweet Potatoes? This happy little starch is a workhorse, containing vitamin A, vitamin C, manganese, fiber, B vitamins, potassium, and even iron! It can even be eaten if you follow the Paleo lifestyle! Yeah baby!

How about these stats: A medium sized sweet potato contains:


  • MORE than your daily requirement of vitamin A.
  • almost a third (1/3) of your daily intake of vitamin C.
  • close to 15% of your dietary fiber requirement.
  • 10% of your daily potassium.
  • antioxidents that have anti-inflammatory properties.
  • a mix of beta-carotene and vitamin C that rid the body of free radicals (which are necessary for some body functions but can also cause damage in reactions with DNA)

I love eating sweet potatoes, especially around this time of year. Hello Thanksgiving! One of my favorite ways to enjoy this veggie is by making it into chips. Yes - I said chips! They satisfy my crunch and sweet craving all at once! Plus they are good for me!




Here's how I make my sweet potato chips:

Ingredients:

  • 4 Medium Sweet Potatoes, scrubbed clean
  • 1/4 cup unrefined coconut oil

Directions:
  1. Preheat oven to 300 degrees F.
  2. Slick sweet potatoes to roughly 1/4 inch thick. I use the "thick" setting on my mandolin slicer.
  3. Melt the coconut oil in the microwave or on the stove.
  4. Place the sliced sweet potatoes and oil into a ziplock bag.
  5. Coat the chips with the oil.
  6. Cover a cookie sheet with aluminum foil.
  7. Place sweet potato slices onto the covered cookie sheet. 
  8. Bake for 25 minutes.
  9. Take out of oven and flip the chips.
  10. Bake for another 15-20 minutes, watching them carefully to make sure they don't burn.
  11. Let the chips cool. They will harden as the cool.
  12. Place in an airtight container and enjoy!

Chocolate Peanut Butter Shakeology Ice Cream

I have to let you in on a little secret. It's not well known but it is true. It has to do with the freezer. Usually includes chocolate of some sort. If peanut butter is involved, that's even better.

Ok - here it goes. Confession time. Ready for it?



You will never guess what my secret is...





I am obessed with LOVE Ice Cream.


PHEW - I'm so glad I got that out in the open! I'm sure you had no idea that I have a sweet tooth. 

Ok - I'll stop trying to pretend that you had no idea that I love sweets. I'm not the type of person to hide that I'm normal. I have cravings. I want junk. 

When I started on this health journey, I realized I would have to find ways to replace my old junk with healthier versions.

Seriously - this stuff has been a lifesaver for me. I've come up with all kinds of fun recipes that trick my brain into thinking I'm eating junk food yet I'm really eating the equivalent of 5 salads! Hello healthy junk food!

So - the point of my rambling. I wanted to share my favorite Shakeology Recipe. It's quick and easy and hits the spot on a Friday night when I just want to veg out on the couch and enjoy some comfort food!




Ingredients:

  • 1.5 cups of dark chocolate almond milk
  • 1 scoop/packet chocolate Shakeology
  • 1 square dark chocolate (at least 70%)
  • 1 Tbsp all natural PB (The only ingredient should be peanuts or you could sub almond butter too if you so desire!)
  • Ice 

Directions:
  1. Place all the ingredients in a blender.
  2. Use enough ice to get your desired thickness (I use a little less than I would use for my shakeology shake with my ice cream - around 6 or 8 cubes)
  3. Pulse blend to get everything chopped up and then liquify.
  4. Pour ice cream into a freezer safe container and let it freeze for about a half hour.
  5. Sit down and enjoy the yumminess of guilt free ice cream!

Paleo Banana Nut Bread

During my Paleo challenge last week, I was craving carbs in the WORST way! You know how it goes, when you CAN'T have something, that's all you WANT! Grrr!





So I came up with this recipe for Paleo friendly banana nut bread because I had bananas that needed to be used asap! I found the original recipe here. I loved the simplicity of the recipe but I didn't have enough almond flour and I wanted to spice it up a bit with walnuts. Here's what my version entails:

Ingredients:

  • Dry Ingredients:
    • 1 1/2 cups almond flour
    • 1/2 cup coconut flour
    • 1 tsp baking soda
    • 1/2 tsp sea salt
    • 1 Tbsp cinnamon
    • 1/4 cup unsweetened, shredded coconut
    • 1/2 cup diced, raw walnuts

  • Wet Ingredients:
    • 4 ripe bananas, mashed
    • 3 eggs (I use organic cage free)
    • 1/4 cup honey (I use local, organic honey)
    • 1/4 cup organic, unrefined coconut oil, melted
    • 1 Tbsp vanilla (I use organic vanilla)

Directions:
  1. Preheat oven to 350 degrees F. 
  2. Mix all the dry ingredients, except the walnuts, together in a large mixing bowl.
  3. Mix all the wet ingredients together in a medium mixing bowl, making sure the bananas are incorporated with the other ingredients well.
  4. Slowly pour the wet ingredients into the dry ingredients.
  5. Stir together until dough is moist and completely mixed.
  6. Fold the walnuts into the dough.
  7. Pour into a greased loaf pan.
  8. Place in the center of your oven for approximately 45 minutes, or until a toothpick inserted in the middle of the bread comes out clean.
  9. Let the bread cool slightly and enjoy.
